His Gamay grapes, planted on Mont Py in schist and volcanic rock soils, are harvested at full maturity without herbicides or synthetic products. His style is based on cold maceration, which allows for the extraction of intense fruit aromas and a characteristic velvety tannin structure. The grapes are harvested using carbonic maceration, a method typical of Beaujolais, and the wines are aged for less than a year in oak barrels. They are neither sulfited nor fined, guaranteeing exceptional fruit purity and a profound expression of the terroir.
