David Croix vinifies grapes from 5 hectares of different vineyard sites in Beaune Premier Cru, Savigny, Aloxe, and Corton. The vines are planted in a rich, red soil, saturated with iron oxides, which promotes the structure and depth of the Pinot Noir. All the wines strive for finesse and delicacy, always with substance but without overly dominant oak aging.

The vines are planted in "red" soil rich in iron oxides, which promotes the uprightness and depth of the Pinot Noir. The result is great, very exclusive red Beaune wines, with the seriousness and austerity that characterize these appellations intended for long aging.
David Croix produces three Cortons: La Vigne au Saint, a Corton Grèves and a Corton-Charlemagne as well as five Beaune 1er Cru: Les Cents Vignes, Les Tuvilains, Les Bressandes, Pertuisots and Les Grèves.
Partial whole-cluster fermentation varies depending on the vintage, and the wines are aged for a long time in barrels and vats for 24 months. They are neither fined nor filtered.
